Indulge in a comforting rhubarb crumble that combines tart rhubarb with a sweet, buttery oat topping. This delightful dessert is perfect for a cozy weeknight treat or a special gathering with friends and family.

Ingredients

  • 500 grams fresh rhubarb, chopped
  • 150 grams granulated sugar
  • 150 grams all-purpose flour
  • 100 grams unsalted butter, softened
  • 75 grams rolled oats
  • 1 teaspoon ground cinnamon
  • 1 tablespoon water

Method

  1. 1

Preheat your oven to 190°C (375°F).

  2. 2

In a large mixing bowl, combine chopped rhubarb, 50 grams of the sugar, and 1 tablespoon of water. Stir well and set aside to macerate for about 10 minutes.

  3. 3

In another bowl, mix the flour, remaining sugar, rolled oats, and ground cinnamon. Add the softened butter and rub together with your fingers until the mixture resembles coarse crumbs.

  4. 4

Transfer the rhubarb mixture into a baking dish, spreading it evenly.

  5. 5

Evenly sprinkle the crumble mixture over the rhubarb filling.

  6. 6

Bake in the preheated oven for 30-35 minutes, or until the crumble is golden brown and the rhubarb is bubbling.

  7. 7

Remove from oven and allow to cool slightly before serving.

  8. 8

Serve warm, optionally with custard or ice cream.
