Indulge in homemade ravioli filled with creamy ricotta and Parmesan, delicately seasoned with fresh parsley. This Italian classic is perfect for a cozy weeknight dinner or a special gathering with loved ones.

Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

    On a clean surface, make a mound with the flour and create a well in the center. Crack the eggs into the well.

    Gradually mix the flour into the eggs using a fork until a dough forms. Knead for about 10 minutes until smooth.

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    In a bowl, combine ricotta, Parmesan, parsley, salt, and pepper for the filling.
