- 3 large eggs
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 tablespoon fresh parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

On a clean surface, make a mound with the flour and create a well in the center. Crack the eggs into the well.

Gradually mix the flour into the eggs using a fork until a dough forms. Knead for about 10 minutes until smooth.

Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

In a bowl, combine ricotta, Parmesan, parsley, salt, and pepper for the filling.

Roll out the dough thinly using a pasta machine or rolling pin. Cut the dough into squares (about 2 inches per side).
