Preheat your oven to 275°F (135°C).

Heat olive oil in a large skillet over medium-high heat. Season the beef chuck roast with salt and pepper, then sear it in the skillet until browned on all sides, about 4-5 minutes per side.

Transfer the seared roast to a large Dutch oven or oven-safe pot. Add the chopped onion, minced garlic, carrots, potatoes, thyme, and beef broth around the roast.
