Indulge in a warm Plum Tarte Tatin, where sweet, caramelized plums meet flaky all-butter puff pastry, creating a stunning dessert. Perfect for a cozy evening or a special gathering with friends and family.

1

Plum Filling

What you need

  • 600 g mixed-colour plums
  • 1 teaspoon ground cinnamon
  • 120 ml maple syrup

Method

  1. 1

Preheat the oven to 220°C (425°F).

  2. 2

Place a 26cm non-stick ovenproof frying pan on a medium heat.

  3. 3

Halve and destone the plums, add to the pan with 30ml of water and cook for 1 minute.

  4. 4

Sprinkle over the cinnamon, then evenly pour over the maple syrup.

2

Puff Pastry

What you need

  • 320 g all-butter puff pastry (cold)

Method

  1. 1

Place the pastry over the plums, tucking it into the edges of the pan and trimming off any excess to patch up little gaps if needed.

  2. 2

Bake at the bottom of the oven for 16 minutes, or until golden and puffed up.

Assembly

  1. 1

Carefully turn the tarte out onto a plate bigger than the pan.

  2. 2

Dish up with nice round scoops of ice cream, sprinkle over the remaining cinnamon, and drizzle lightly with extra virgin olive oil before serving.

Optional Extras

  • 6 scoops vanilla ice cream
