Indulge in the rich, crispy flavors of Peking Duck, a classic Chinese dish that brings a festive touch to any gathering. Serve it with tender pancakes and fresh scallions for a memorable weeknight dinner or special occasion feast.

Ingredients

  • 1 whole duck
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon five-spice powder
  • 1 teaspoon salt
  • 2 cups boiling water
  • 10 pieces scallions
  • 1 package Chinese pancakes

Method

    Rinse the duck under cold water and pat it dry with paper towels. Remove any excess fat.

    In a bowl, mix together the honey, soy sauce, rice vinegar, five-spice powder, and salt.

    Rub the mixture all over the duck, inside and out. Let it marinate for at least 1 hour (or overnight in the fridge for best results).

    Preheat the oven to 200°C (392°F). Boil water in a large pot, then carefully pour it over the duck to tighten the skin.

    Place the duck on a rack in a roasting pan. Roast in the preheated oven for about 60-70 minutes, basting occasionally with the drippings.

    Increase the oven temperature to 220°C (428°F) for the last 10 minutes to crisp the skin further.
