Preheat your grill or oven to medium-high heat.

In a mixing bowl, combine the ground beef, chopped onion, minced garlic, black pepper, salt, and red pepper flakes. Mix well until thoroughly combined.

Take a slice of eggplant, mold a small amount of the meat mixture onto it, and then cover it with another slice of eggplant to form a kebab. Repeat until all ingredients are used.

Brush the assembled kebabs with olive oil on both sides.
