- 2 tablespoons vegetable oil
- 2 medium onions
- 3 cloves garlic

- 2 cups beef stock
- 2 bay leaves dried bay leaves
- 1 teaspoon black pepper
- 1 teaspoon salt
Method

Heat the vegetable oil in a large pot over medium-high heat.

Brown the oxtail pieces on all sides, then remove from the pot and set aside.

Add the chopped onions, garlic, carrots, and celery to the pot, and sauté until the onions are translucent.

Return the oxtail to the pot and add the chopped tomatoes, beef stock, bay leaves, black pepper, and salt.

Bring to a boil, then reduce the heat to low, cover, and simmer for about 2-3 hours until the oxtail is tender.

Check occasionally and add more beef stock or water if needed to keep the meat submerged.
