Experience the vibrant flavors of Malaysia with Nasi Lemak, a fragrant coconut rice dish served with crispy anchovies, spicy sambal, and hard-boiled eggs. Perfect for a comforting weeknight dinner or a festive gathering.
IngredientsWhat you need
- 2 cups long-grain rice
- 1 cup coconut milk
- 1 cup water
- 1 teaspoon salt
- 4 pieces hard-boiled eggs
- 1 cup fried anchovies
- 1 cup peanut sambal
- 1 cucumber sliced
Method
- 1
Rinse the rice under cold water until the water runs clear. Drain well.
- 2
In a pot, combine the rice, coconut milk, water, and salt. Bring to a boil.
- 3
Once boiling, reduce the heat to low, cover, and let it simmer for 20 minutes or until the rice is cooked and fluffy.
- 4
While the rice is cooking, prepare the accompaniments: hard-boil the eggs, fry the anchovies, and slice the cucumber.
- 5
Once the rice is ready, fluff it gently with a fork and let it sit for 5 minutes.
- 6
To serve, place a portion of rice on a plate, top with half a hard-boiled egg, a handful of fried anchovies, a spoonful of peanut sambal, and cucumber slices.
- 7
Enjoy your Nasi Lemak warm, as a delightful meal or snack.
