Savor the rich flavors of Kenyan Mutura, a delightful blend of spiced goat intestines and minced beef, perfect for a weekend gathering or a festive occasion. Enjoy this unique dish grilled to perfection, bringing warmth to your table.
IngredientsWhat you need
- 1 kg goat intestines
- 500 g minced beef
- 2 tablespoons kikuyu spice mix
- 1 cup onions
- 2 cloves garlic
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 cup water
Method
- 1
Begin by thoroughly cleaning the goat intestines. Rinse them under running water and then soak in salted water for about 30 minutes.
- 2
In a mixing bowl, combine the minced beef, kikuyu spice mix, onions, garlic, salt, and black pepper. Mix well until all ingredients are evenly combined.
- 3
Stuff the cleaned intestines with the meat mixture, ensuring they are filled but not too tight to allow for expansion during cooking. Tie the ends securely with kitchen twine.
- 4
In a large pot, bring the water to a boil and carefully place the stuffed intestines in the boiling water. Cover and cook for about 30-40 minutes.
- 5
After boiling, remove the intestines from the pot and let them cool slightly. Preheat a grill or charcoal barbecue.
- 6
Grill the stuffed intestines for about 10-15 minutes, turning occasionally, until they are well browned and cooked through.
- 7
Once cooked, remove from the grill and let rest for a few minutes before slicing.
- 8
Serve hot with your favorite side dishes, such as ugali or kachumbari.
