- 4 cups beef broth
- 2 tablespoons vegetable oil
- 3 medium carrots
- 3 medium potatoes
- 1 medium onion
- 3 cloves garlic
- 1 teaspoon thyme
- 1 teaspoon black pepper
- 2 tablespoons flour

In a large pot, heat the vegetable oil over medium-high heat. Add the moose meat and brown it on all sides.

Once the meat is browned, add the chopped onion and minced garlic. Sauté until the onion is translucent.

Pour in the beef broth and bring to a boil. Reduce heat to low and let it simmer for 1 hour.

Add the sliced carrots, cubed potatoes, thyme, and black pepper. Stir well and continue simmering for another 1 to 1.5 hours or until the meat is tender.

If you prefer a thicker stew, mix the flour with a little water to create a slurry and stir it into the pot during the last 15 minutes of cooking.
