- 1 kg whole chicken
- 500 g basmati rice
- 3 tbsp ghee
- 1 large onion
- 2 cloves garlic
- 1 tbsp Mandi spice mix
- 1 liter water
- Salt to taste salt
Method

Heat ghee in a large pot over medium heat. Add chopped onions and sauté until golden brown.

Stir in the minced garlic and cook for another minute until fragrant.

Add the chicken pieces and cook until they are browned on all sides.

Sprinkle in the Mandi spice mix and salt, mixing well to coat the chicken evenly.

Pour in the water and bring to a boil. Reduce heat, cover, and simmer for about 40 minutes until the chicken is tender.

Remove the chicken from the pot and set aside. Add the soaked basmati rice to the pot. Stir well and bring to a boil.

Reduce heat, cover, and cook for about 20 minutes until the rice is fully cooked and has absorbed the liquid.

Meanwhile, grill or roast the chicken until the skin is crispy. Serve the rice topped with the chicken.
