Indulge in the warm, spiced goodness of Mandazi, a delightful East African coconut doughnut. Perfect for breakfast or an afternoon snack, these lightly sweetened treats are infused with cardamom and deep-fried to golden perfection.

- 4 cups all-purpose flour
- 1 cup coconut milk
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cardamom
- 2 tablespoons vegetable oil

Method

In a large mixing bowl, combine flour, sugar, baking powder, salt, and ground cardamom. Mix well.

Add coconut milk and vegetable oil to the dry ingredients. Mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes until smooth. Let it rest for 30 minutes, covered with a damp cloth.

After resting, roll out the dough to about 1/4 inch thick and cut into triangular or circular shapes.

In a deep frying pan, heat oil over medium heat. Once hot, fry the mandazi in batches until golden brown on both sides.
