Savor the rich flavors of Majboos, a fragrant Middle Eastern rice dish featuring tender chicken, aromatic spices, and sweet raisins. Ideal for a cozy family dinner or a festive gathering with friends.

- 1 kg chicken, cut into pieces
- 2 cups basmati rice, soaked
- 4 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 teaspoons majboos spice mix
- 4 cups water
- 1 cup raisins
- 0.5 cup almonds, toasted
Method

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.

Add the minced garlic and ginger, and cook for another 2 minutes until fragrant.

Stir in the chicken pieces and cook until they are browned on all sides.

Add the majboos spice mix and water. Bring to a boil, then reduce heat, cover, and simmer for about 40 minutes, or until the chicken is cooked through.

Remove the chicken and set aside. Strain the broth and return it to the pot.

Add the soaked basmati rice to the broth, along with the raisins. Stir well and bring to a boil, then reduce heat to low, cover, and cook for 20 minutes or until rice is tender.

While the rice is cooking, grill or roast the chicken until the skin is crispy. Return it to the rice during the last 5 minutes of cooking.

Once done, fluff the rice with a fork and serve topped with the crispy chicken and toasted almonds.
