Ingredients

  • 2 cups semolina flour
  • 1 cup all-purpose flour
  • 1/2 cup ghee or unsalted butter
  • 1/2 cup powdered sugar
  • 1 cup dates, pitted and chopped
  • 1 teaspoon ground cinnamon
  • 1/4 cup water
  • 1 teaspoon rose water

Method

    In a large bowl, combine the semolina flour, all-purpose flour, and powdered sugar. Mix well.

    Add the melted ghee (or butter) to the flour mixture and mix until crumbly.

    Gradually add the water and rose water, mixing until a soft dough forms. Cover and let it rest for 30 minutes.

    Meanwhile, prepare the filling by mixing chopped dates, ground cinnamon, and any optional nuts together in a bowl.

    Preheat the oven to 180°C (350°F).

    Take a small piece of the dough, flatten it in your palm, and place about a teaspoon of the filling in the center. Fold the dough over the filling and shape it into a ball or use a mold for traditional shapes.

    Place the maamoul on a baking sheet lined with parchment paper and bake for 20-30 minutes, or until lightly golden.
