- 1 cup semolina
- 1 cup unsalted butter
- 1/2 cup powdered sugar
- 1 teaspoon ground mahlab
- 1 cup dates
- 1/4 cup walnuts
- 1 teaspoon orange blossom water

In a large bowl, combine the all-purpose flour, semolina, and melted butter. Mix well until crumbly.

Add the powdered sugar and ground mahlab if using. Mix until the mixture is well combined.

Gradually add water, a little at a time, mixing until a soft dough forms. Cover the dough and let it rest for about 30 minutes.

While the dough is resting, prepare the filling by mixing the mashed dates, chopped walnuts, and orange blossom water in a bowl until well combined.

Preheat the oven to 180°C (350°F). Grease a maamoul mold or use your hands to shape the cookies.

Take a small ball of dough, flatten it in your palm, and place a teaspoon of filling in the center. Fold the dough over and shape it into a ball or press it into the mold.

Place the formed maamoul onto a baking tray lined with parchment paper and bake for about 15-20 minutes, or until lightly golden.
