Ingredients

  • 500 grams pork shoulder
  • 100 grams pork fat
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon sage
  • 1 teaspoon thyme
  • 3 meters natural sausage casings

Method

    In a mixing bowl, combine the minced pork shoulder and pork fat.

    Add salt, black pepper, sage, and thyme to the meat mixture. Mix well until all ingredients are evenly incorporated.

    Rinse the sausage casings thoroughly under cold water and then soak them in water for about 30 minutes.

    Stuff the sausage casings with the meat mixture, ensuring there are no air pockets. Twist into sausages of your desired length.

    Heat a skillet over medium heat and add a little oil. Once hot, add the sausages and cook for about 8-10 minutes, turning occasionally until they are browned and cooked through.
