Ingredients

  • 1 kg lamb shoulder, cut into chunks
  • 4 medium potatoes, peeled and diced
  • 3 medium carrots, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef or lamb stock
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp olive oil
  • to taste salt and pepper

Method

    Heat the olive oil in a large pot over medium heat.

    Add the lamb chunks and brown them on all sides for about 5-7 minutes.

    Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes.
