Indulge in the sweet, nutty flavors of Künefe, a delightful Turkish dessert made with crispy kataifi pastry, creamy ricotta, and fragrant rose water. Perfect for a special occasion or a cozy evening treat.

- 250 grams kataifi pastry
- 200 grams unsalted butter
- 200 grams whole milk ricotta cheese
- 100 grams sugar
- 120 ml water
- 1 teaspoon rose water
- 50 grams pistachios

Start by preparing the syrup. In a saucepan, combine sugar and water. Bring to a boil, then reduce heat and simmer for about 10 minutes until slightly thickened. Remove from heat and add rose water if using. Let it cool.

Preheat your oven to 180°C (350°F).

In a large mixing bowl, gently pull apart the kataifi pastry to separate the strands. Pour melted butter over the pastry and mix well to ensure all strands are coated.

Grease a round baking dish or an oven-safe skillet with some melted butter. Layer half of the kataifi pastry evenly on the bottom of the dish.

Spread the ricotta cheese evenly over the kataifi layer. Then, top with the remaining kataifi pastry, pressing it down gently.

Bake in the preheated oven for about 20 minutes or until golden brown and crispy on top.

Once baked, remove from the oven and immediately pour the cooled syrup over the hot künefe. Allow it to soak for a few minutes.
