Savor the comforting taste of Knödel, a traditional German dumpling made with day-old bread, buttery onions, and fresh parsley. Perfect for a cozy weeknight dinner or as a hearty side to your favorite roast.

- 300 g day-old bread
- 150 ml milk
- 1 large egg
- 1 medium onion
- 30 g butter
- 1 teaspoon salt
- 1 teaspoon fresh parsley
- 1 liter water

In a frying pan, melt the butter over medium heat and sauté the chopped onion until golden brown. Remove from heat and let cool.

In a large mixing bowl, combine the cubed bread, sautéed onions, milk, egg, salt, and parsley (if using). Mix well until all ingredients are evenly incorporated.

Allow the mixture to rest for about 10-15 minutes to let the bread absorb the liquids.

Bring a liter of water to a gentle boil in a large pot. Form the bread mixture into balls (about the size of a golf ball).

Carefully drop the dumplings into the boiling water and let them cook for about 15 minutes. They are done when they float to the surface.

Once cooked, remove the dumplings with a slotted spoon and allow them to drain on paper towels.
