Experience the heartwarming flavors of Eastern Europe with Kholodets, a traditional jellied meat dish made from tender pork and aromatic dill. Perfect for festive gatherings or a cozy family dinner, this dish is sure to impress.
IngredientsWhat you need
- 1 kg pork meat (with skin)
- 2 liters water
- 2 teaspoons salt
- 1 bunch fresh dill
- 5 pieces peppercorns
Method
- 1
Place the pork meat in a large pot and add the water.
- 2
Bring the water to a boil over medium heat, skimming off any foam that forms.
- 3
Add salt, peppercorns, and half of the fresh dill to the pot.
- 4
Reduce the heat and simmer for about 2 hours or until the meat is tender and falling off the bone.
- 5
Remove the meat from the pot and let it cool slightly. Strain the broth to remove any solids.
- 6
Shred the meat into small pieces and place them in a deep dish or individual molds.
- 7
Pour the strained broth over the meat, ensuring it is fully covered. Let it cool to room temperature, then refrigerate until set, about 4-6 hours or overnight.
- 8
Once set, garnish with remaining fresh dill and serve cold with mustard or horseradish.
