- 4 cups full-fat milk
- 1 cup sugar
- 1 teaspoon cardamom powder
- 2 tablespoons ghee
- 1/4 cup chopped nuts
- 1/4 cup raisins
- 1 teaspoon saffron strands
Method

In a heavy-bottomed pot, heat the ghee over medium heat.

Add the soaked Basmati rice and sauté for 2-3 minutes until lightly toasted.

Pour in the milk and bring it to a gentle boil, stirring occasionally to prevent sticking.

Once boiling, reduce the heat and let it simmer, stirring frequently, for about 30 minutes until the rice is cooked and the mixture thickens.

Add sugar, cardamom powder, saffron milk, chopped nuts, and raisins. Stir well and cook for another 5-10 minutes.

Remove from heat and let it cool slightly. Kheer can be served warm or chilled.

Garnish with additional nuts before serving.
