- 1 kg chicken, cut into pieces
- 2 cups basmati rice
- 4 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Kabsa spice mix
- 4 cups water
- 1 cup tomato puree
- 1 teaspoon salt
Method

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

Add the minced garlic and sauté for another minute until fragrant.

Stir in the chicken pieces and cook until they are lightly browned on all sides.

Add the Kabsa spice mix, tomato puree, and salt. Mix well and let it cook for 5 minutes.

Pour in the water and bring it to a boil. Cover and let it simmer for about 30 minutes until the chicken is cooked through.

Remove the chicken from the pot. Add the soaked basmati rice to the pot and stir gently.

Place the chicken pieces back on top of the rice, cover, and cook on low heat for another 20 minutes, or until the rice is fully cooked.

Fluff the rice with a fork and serve hot, garnished with nuts or raisins if desired.
