Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1 cup yogurt
  • 1/2 cup water
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon saffron strands
  • 1/4 teaspoon cardamom powder
  • 1 cup oil

Method

    In a bowl, mix the all-purpose flour, cornstarch, and yogurt to form a smooth batter.

    Add water gradually to adjust the consistency of the batter; it should be thick but flowing.

    Allow the batter to rest for about 20 minutes while you prepare the sugar syrup.

    In a saucepan, combine sugar and 1/2 cup water. Heat until the sugar dissolves, then add saffron strands and cardamom powder. Let it simmer until slightly thickened.

    Heat oil in a deep pan over medium heat. Place the batter in a piping bag or squeeze bottle.

    Once the oil is hot, pipe the batter in circular shapes into the oil, frying until golden brown on both sides.

    Remove the fried jalebis and immediately dip them in the warm sugar syrup for a few seconds.
