Warm your soul with this hearty Irish stew, brimming with tender lamb, earthy potatoes, and vibrant carrots. Ideal for cozy weeknight dinners or gatherings, it’s a comforting dish that celebrates rustic flavors.
IngredientsWhat you need
- 1.5 kg lamb shoulder or neck, boneless
- 4 medium potatoes
- 3 large carrots
- 2 medium onions
- 1 liter beef or lamb stock
- 2 tbsp vegetable oil
- 2 sprigs fresh thyme
- to taste salt and pepper
Method
- 1
Heat the vegetable oil in a large pot over medium heat.
- 2
Add the lamb chunks and brown them on all sides. This should take about 5-7 minutes.
- 3
Once browned, add the chopped onions and cook until they are soft and translucent, about 3-4 minutes.
- 4
Pour in the stock, and add the potatoes, carrots, thyme, salt, and pepper. Stir to combine.
- 5
Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the meat is tender.
- 6
Check occasionally, stirring to prevent sticking, and add more stock or water if needed.
- 7
Once the meat is tender, taste and adjust seasoning as necessary before serving.
- 8
Serve hot with crusty bread for a classic Irish experience.
