Ingredients

  • 1.5 kg lamb shoulder or neck, boneless
  • 4 medium potatoes
  • 3 large carrots
  • 2 medium onions
  • 1 liter beef or lamb stock
  • 2 tbsp vegetable oil
  • 2 sprigs fresh thyme
  • to taste salt and pepper

Method

    Heat the vegetable oil in a large pot over medium heat.

    Add the lamb chunks and brown them on all sides. This should take about 5-7 minutes.

    Once browned, add the chopped onions and cook until they are soft and translucent, about 3-4 minutes.

    Pour in the stock, and add the potatoes, carrots, thyme, salt, and pepper. Stir to combine.
