Experience the vibrant flavors of Ghana with Ice Kenkey, a refreshing corn dish served chilled with a hint of sweetness. Perfect for a summer picnic or as a unique side at your next gathering.

Ingredients

  • 2 cups maize (corn) dough
  • 1 cup water
  • 1 cup ice cubes
  • 1 cup fermented corn dough (optional)
  • 1 tbsp salt
  • 2 cups water (for cooking)
  • 2 tbsp sugar

Method

  1. 1

In a large bowl, mix the maize dough with 1 cup of water until smooth. If using, add the fermented dough.

  2. 2

Add the salt and sugar (if using) to the mixture and stir well to combine.

  3. 3

In a pot, bring 2 cups of water to a boil. Reduce heat and add the mixture, stirring continuously to prevent lumps.

  4. 4

Cook the mixture for about 15-20 minutes, stirring constantly until it thickens and pulls away from the sides of the pot.

  5. 5

Once cooked, remove from heat and let it cool slightly before shaping into balls or molds.

  6. 6

Place the shaped kenkey into the refrigerator to chill for about 1 hour.

  7. 7

To serve, place the chilled kenkey in a bowl with ice cubes around it. Enjoy as a refreshing snack or side dish.
