- 2 cups maize (corn) dough
- 1 cup water
- 1 cup ice cubes
- 1 cup fermented corn dough (optional)
- 1 tbsp salt
- 2 cups water (for cooking)
- 2 tbsp sugar
Method

In a large bowl, mix the maize dough with 1 cup of water until smooth. If using, add the fermented dough.

Add the salt and sugar (if using) to the mixture and stir well to combine.

In a pot, bring 2 cups of water to a boil. Reduce heat and add the mixture, stirring continuously to prevent lumps.

Cook the mixture for about 15-20 minutes, stirring constantly until it thickens and pulls away from the sides of the pot.

Once cooked, remove from heat and let it cool slightly before shaping into balls or molds.

Place the shaped kenkey into the refrigerator to chill for about 1 hour.

To serve, place the chilled kenkey in a bowl with ice cubes around it. Enjoy as a refreshing snack or side dish.
