Experience the rich, nutty flavors of West Africa with this Groundnut Soup, a comforting blend of roasted peanuts, aromatic spices, and savory broth. Ideal for cozy weeknight dinners or a special gathering with friends.
IngredientsWhat you need
- 2 cups groundnuts (peanuts), roasted and blended
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 4 cups chicken or vegetable broth
- 1 tablespoon palm oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Method
- 1
In a large pot, heat the palm oil over medium heat.
- 2
Add the chopped onion, garlic, and ginger. Sauté until the onions are translucent.
- 3
Pour in the chicken or vegetable broth and bring to a boil.
- 4
Once boiling, reduce the heat and stir in the blended groundnuts. Mix well to avoid lumps.
- 5
Season with salt and black pepper. Let it simmer for about 30 minutes, stirring occasionally.
- 6
Adjust seasoning to taste. If the soup is too thick, add more broth or water to reach desired consistency.
- 7
Serve hot, optionally with rice or fufu.
