Indulge in the sweet nostalgia of Flapper Pie, a classic Canadian dessert with a buttery graham cracker crust, creamy vanilla custard, and fluffy meringue. Perfect for family gatherings or a cozy evening treat.
IngredientsWhat you need
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 3 large egg whites
- 1/4 cup granulated sugar
Method
- 1
Preheat your oven to 350°F (175°C).
- 2
In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until combined.
- 3
Press the crumb mixture firmly into the bottom of a pie pan to form the crust. Bake for 10 minutes, then remove and let cool.
- 4
In a saucepan, heat milk over medium heat. In a separate bowl, whisk together 1/2 cup sugar, cornstarch, and a pinch of salt. Gradually whisk in the hot milk until smooth.
- 5
Return the mixture to the saucepan and cook, stirring continuously, until it thickens. Remove from heat and stir in vanilla extract.
- 6
Pour the filling into the cooled graham cracker crust, smoothing the top.
- 7
In a clean bowl, beat egg whites until soft peaks form. Gradually add 1/4 cup sugar and beat until stiff peaks form.
- 8
Spread the meringue over the pie filling, making sure to seal the edges. Bake for an additional 10 minutes or until the meringue is lightly browned.
