In a large saucepan, combine the white fish fillets and smoked haddock. Pour in the milk and gently poach the fish for about 8-10 minutes until cooked through. Remove the fish and set aside, reserving the milk.

In the same saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to create a roux. Gradually add the reserved milk, stirring continuously until the sauce thickens.
