- 4 pieces white fish fillets (such as cod or haddock)
- 1 cup all-purpose flour
- 1 cup sparkling water
- 1 teaspoon baking powder
- 2 medium potatoes
- Salt to taste sea salt
- Oil for frying vegetable oil

Peel the potatoes and cut them into thick fries. Soak in cold water for about 30 minutes, then drain and pat dry.

In a large mixing bowl, combine flour, baking powder, and a pinch of salt. Gradually whisk in the sparkling water until the batter is smooth.

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with sea salt.
