Indulge in a tender filet mignon drizzled with a rich, spicy peanut sauce that balances savory and sweet. This dish is perfect for a special occasion or an elegant weeknight dinner that will impress your guests.

Ingredients

  • 1.25 kg beef fillet
  • 1 tbsp coarsely ground black pepper
  • 1 tsp seasoned sea salt
  • 1 tsp ground ginger
  • 2 tbsp sunflower oil
  • 0.5 cup smooth peanut butter
  • 0.5 cup top-quality dark soy sauce
  • 1 tbsp lemon juice
  • 1-2 hot chillies, finely sliced

Method

    Make sure the fillet is neatly trimmed. Double up the thin tail end and tie with cotton string. Mix the pepper, seasoned salt, and ginger and sprinkle over the meat.

    Mix all the sauce ingredients together, spread over the meat and marinate for 4 hours or overnight in an oven-proof dish.

    Roast open, in the dish at 220°C (425°F) for about 30 minutes, or until done to your preference. Allow the meat to rest for 10 minutes and slice thinly. Reheat the sauce and serve on the side.

    For a cold buffet, firm the meat in the refrigerator and slice very thinly. The sauce can be diluted with a little beef stock, reheated and served hot or at room temperature with the meat.

Notes

For best results, use a meat thermometer and a good quality sauce.
