Experience the heart of Brazilian cuisine with this hearty feijoada, a black bean stew brimming with tender pork and smoky sausages. Perfect for a cozy family dinner or a festive gathering with friends.

Ingredients

  • 500 grams black beans
  • 200 grams pork shoulder
  • 150 grams chorizo sausage
  • 100 grams smoked sausage
  • 1 large onion
  • 4 cloves garlic
  • 2 cups water
  • 2 tablespoons olive oil
  • 1 teaspoon bay leaves
  • to taste salt and pepper

Method

  1. 1

In a large pot, heat the olive oil over medium heat and sauté the chopped onion until translucent.

  2. 2

Add minced garlic and cook for another minute until fragrant.

  3. 3

Stir in the pork shoulder, chorizo, and smoked sausage. Cook until the meat is browned on all sides.

  4. 4

Add the soaked black beans and water to the pot. Bring to a boil.

  5. 5

Reduce heat to low, add bay leaves, salt, and pepper. Cover and let simmer for about 2 to 3 hours, stirring occasionally, until the beans and meats are tender.

  6. 6

Once cooked, remove bay leaves and adjust seasoning if necessary.

  7. 7

Serve hot with rice, orange slices, and sliced collard greens for a traditional touch.
