Indulge in the sweet, chewy delight of Cuberdons, a traditional Belgian candy bursting with raspberry or violet flavor. Perfect for sharing at gatherings or enjoying as a unique treat after dinner.

- 1 cup granulated sugar
- 1/2 cup glucose syrup
- 1/2 cup water
- 2 tablespoons flavoring (raspberry or violet)
- 1/4 teaspoon citric acid
- 1 tablespoon gelatin powder
- 1 tablespoon powdered sugar

In a saucepan, combine granulated sugar, glucose syrup, and water. Heat over medium heat until the sugar dissolves completely, stirring occasionally.

Once the mixture is boiling, let it simmer without stirring for about 10 minutes until it reaches the soft-ball stage (around 115°C or 240°F).

Remove the saucepan from heat and stir in the flavoring and citric acid. Mix well to incorporate the flavors.

In a separate bowl, sprinkle gelatin powder over 2 tablespoons of cold water and let it bloom for about 5 minutes.

Add the bloomed gelatin to the hot syrup mixture and stir until completely dissolved.

Pour the mixture into silicone molds, filling them about three-quarters full. Allow them to cool and set at room temperature for several hours or until firm.

Once set, gently remove the cuberdons from the molds and dust them with powdered sugar to prevent them from sticking together.
