Fill a medium saucepan with water and add vinegar. Bring to a gentle simmer over medium heat.

In a bowl, mix the Greek yogurt with minced garlic, salt, and black pepper. Set it aside to warm slightly.

Crack each egg into a small bowl and gently slide them into the simmering water, poaching them for about 3-4 minutes until the whites are set but the yolks are still runny.
