Indulge in Çılbır, a delightful Turkish dish of poached eggs nestled in creamy Greek yogurt, drizzled with fragrant garlic butter and paprika. Ideal for a cozy brunch or a comforting weeknight dinner.

Ingredients

  • 4 large eggs
  • 1 cup Greek yogurt
  • 2 tablespoons butter
  • 1 teaspoon paprika
  • 1 clove garlic
  • to taste salt
  • to taste black pepper
  • 1 tablespoon vinegar

Method

    Fill a medium saucepan with water and add vinegar. Bring to a gentle simmer over medium heat.

    In a bowl, mix the Greek yogurt with minced garlic, salt, and black pepper. Set it aside to warm slightly.

    Crack each egg into a small bowl and gently slide them into the simmering water, poaching them for about 3-4 minutes until the whites are set but the yolks are still runny.

    In a small pan, melt the butter over low heat and stir in the paprika, allowing it to infuse for a minute.
