- 1 kg beef tripe
- 500 g beef bones
- 3 liters water
- 2 pcs carrots
- 1 pcs celery root
- 2 pcs onions
- 4 cloves garlic
- 3 pcs egg yolks
- 200 g sour cream
- to taste g salt
- to taste g pepper
- to taste ml vinegar
Method

Rinse the beef tripe under cold water and cut it into strips.

In a large pot, add the beef bones and water. Bring to a boil and allow to simmer for about 30 minutes to create a rich broth.

Add the tripe, carrots, celery root, and onions to the pot. Simmer for 2-3 hours until the tripe is tender.

Remove the bones and vegetables, then cut the tripe into smaller pieces. Return the tripe to the pot.

In a bowl, mix the egg yolks and sour cream. Temper the mixture by adding a ladle of hot broth, then stir it back into the soup.

Add minced garlic, salt, pepper, and vinegar to taste. Stir well and let it simmer for an additional 10 minutes.

Serve hot in bowls with a dollop of sour cream and additional vinegar if desired.
