Ingredients
- 1 packet Romany Cream biscuits, crushed
- 50 g margarine, melted
- 500 g smooth cottage cheese
- 5 ml vanilla essence
- 65 ml sugar
- 3 eggs, separated
- 15 ml gelatine
- 50 ml cold water
- 100 g dark chocolate, grated
- 250 ml cream, whipped
Method
- 1
Mix biscuits and margarine together and press into a greased 200mm loose-bottomed tin. Place in refrigerator to set.

Beat cheese, vanilla and sugar together. Add egg-yolks and beat well.

Dissolve gelatine in water over heat and stir into the cheese mixture.

Add two-thirds of chocolate. Whisk egg-whites until stiff and fold into mixture.

Finally fold in cream. Spoon mixture into tin.

Melt remaining chocolate, and drizzle over top of cheesecake. Swirl lightly with a knife.

Refrigerate until set.
Notes
Use a spring-form tin.
