Preheat your oven to 425°F (220°C).

In a large bowl, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract. Mix until the cherries are evenly coated.

Roll out one pie crust and place it into a 9-inch pie dish. Pour the cherry filling into the crust. Dot the top with small pieces of butter.

Cover the filling with the second pie crust. You can either cut slits in the top for vents or create a lattice pattern. Seal the edges by crimping with a fork or your fingers.

If using, beat the egg and brush it over the crust for a shiny finish.
