Savor the comforting taste of cassava, a starchy root boiled to perfection and infused with garlic and lemon. This versatile dish is ideal for a cozy weeknight dinner or as a delightful side for your next gathering.

Ingredients

  • 1 kg cassava
  • 1 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1 teaspoon crushed garlic
  • 1 tablespoon lemon juice

Method

  1. 1

Peel the cassava and cut it into equal-sized chunks for even cooking.

  2. 2

In a pot, add the cassava chunks and enough water to cover them. Add salt and bring to a boil over medium heat.

  3. 3

Once boiling, reduce the heat and let it simmer for about 20-25 minutes, or until the cassava is tender when pierced with a fork.

  4. 4

Drain the cassava and let it cool slightly. Optionally, you can mash the cassava with crushed garlic for added flavor.

  5. 5

In a pan, heat vegetable oil over medium heat, and then add the drained cassava. Fry until golden and crispy on the outside, about 5-10 minutes.

  6. 6

Remove from heat and serve hot with a drizzle of lemon juice on top.
