Indulge in the flaky, buttery goodness of Butter Gipfeli, a delightful Swiss pastry perfect for breakfast or an afternoon treat. With a rich flavor and tender texture, these crescent rolls will elevate your coffee break to a special occasion.

Ingredients

  • 500 g all-purpose flour
  • 10 g instant yeast
  • 50 g granulated sugar
  • 1 tsp salt
  • 250 ml whole milk
  • 150 g unsalted butter
  • 1 large egg

Method

    In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well.

    Add the warm milk to the dry ingredients and mix until a dough forms.

    Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

    Place the kneaded dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

    Once risen, roll out the dough into a large circle about 1 cm thick. Spread the softened butter evenly on top.

    Cut the circle into 12 equal wedges, rolling each wedge from the wider end towards the tip to form croissant shapes.

    Place the shaped gipfeli on a baking sheet lined with parchment paper. Cover and let rise for another 30 minutes.

    Preheat the oven to 200°C (400°F). Brush the tops of the gipfeli with the beaten egg and bake for 15-20 minutes until golden brown.
