Savor the vibrant flavors of South Africa with Bunny Chow, a hearty dish of tender lamb or chicken simmered in aromatic curry, served in a hollowed-out loaf of bread. Perfect for a cozy weeknight dinner or a fun gathering with friends.

Ingredients

  • 500 grams lamb or chicken, cubed
  • 2 tablespoons oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 400 grams canned tomatoes
  • 1 cup vegetable stock or water
  • 4 pieces white bread loaves

Method

  1. 1

Heat the oil in a large pot over medium heat.

  2. 2

Add the chopped onion and sauté until soft and translucent.

  3. 3

Stir in the minced garlic and curry powder, cooking for an additional minute until fragrant.

  4. 4

Add the cubed meat and cook until browned on all sides.

  5. 5

Pour in the canned tomatoes and vegetable stock or water, stirring to combine.

  6. 6

Simmer on low heat for about 20 minutes, or until the meat is cooked through and tender.

  7. 7

While the curry simmers, cut the tops off the bread loaves and hollow them out.

  8. 8

Once the curry is ready, fill each hollow loaf with the meat mixture and serve immediately.
