Indulge in the sweet delight of Brazo de Reina, a luscious rolled cake filled with creamy condensed milk and a sprinkle of coconut and chocolate. Perfect for festive gatherings or a cozy afternoon treat with friends.
IngredientsWhat you need
- 4 large eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 cup milk
- 1 cup sweetened condensed milk
- 1/2 cup coconut flakes
- 1/2 cup chocolate chips
Method
- 1
Preheat your oven to 350°F (175°C) and grease a 15x10 inch jelly roll pan.
- 2
In a large bowl, beat the eggs and sugar together until thick and pale, about 5-7 minutes.
- 3
Gently fold in the sifted flour and baking powder until just combined. Add the milk and mix until smooth.
- 4
Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 15-20 minutes or until the top is golden and a toothpick comes out clean.
- 5
Once baked, remove from the oven and let it cool for a few minutes. Place a clean kitchen towel over the cake and carefully invert it onto the towel, peeling off the parchment paper.
- 6
Spread the sweetened condensed milk evenly over the cake, followed by the coconut flakes and chocolate chips if using. Roll the cake tightly from one end to the other using the towel to help.
- 7
Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to set.
- 8
Slice the Brazo de Reina into rounds and serve chilled as a delightful dessert.
