- 1 medium onion
- 200 grams bacon

- Fresh parsley for garnish fresh parsley
Method
- 1
Peel the potatoes and cut them into thin slices, about 0.5 cm thick.
- 2
Place the sliced potatoes in cold water for about 10 minutes to remove excess starch, then drain and pat dry.
- 3
In a large frying pan, heat the vegetable oil over medium-high heat. Add the diced bacon (if using) and cook until crispy.

Add the sliced potatoes to the pan in a single layer. Allow them to fry without stirring for about 5-7 minutes until they start to get golden on the bottom.
- 5
Once golden, gently flip the potatoes with a spatula. Add the chopped onion and season with salt and pepper. Cook for another 10-15 minutes, stirring occasionally, until they are crispy and cooked through.
- 6
Remove from heat and garnish with fresh parsley if desired. Serve hot as a side dish or main.
