Savor the taste of Portugal with Bolinho de Bacalhau, crispy codfish fritters infused with fresh parsley and served hot. Ideal for a festive gathering or a cozy weeknight treat, these bites are sure to impress!
IngredientsWhat you need
- 300 grams salted codfish
- 2 medium potatoes
- 1/2 cup chopped parsley
- 1 large egg
- 1 cup all-purpose flour
- to taste none salt and pepper
- oil for frying vegetable oil
Method
- 1
Soak the salted codfish in water overnight, changing the water a couple of times. Drain and shred the codfish into small pieces.
- 2
Boil the peeled potatoes until tender. Drain and mash them in a large bowl.
- 3
In the bowl with the mashed potatoes, add the shredded codfish, chopped parsley, beaten egg, flour, salt, and pepper. Mix well until fully combined.
- 4
Heat vegetable oil in a deep pan over medium heat.
- 5
Shape the mixture into small balls or patties and carefully drop them into the hot oil. Fry until golden brown on all sides.
- 6
Remove the bolinhos from the oil and drain them on paper towels to remove excess oil.
- 7
Serve hot, optionally with a slice of lemon or a dipping sauce of your choice.
