Indulge in the aromatic layers of Biryani, a classic Indian dish bursting with tender chicken, fragrant basmati rice, and a medley of spices. Ideal for a festive gathering or a comforting weeknight dinner.

Ingredients

  • 2 cups Basmati rice
  • 1.5 kgs chicken, cut into pieces
  • 2 large onions, thinly sliced
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons biryani masala
  • 1 teaspoon turmeric powder
  • 4 cups water

Method

    In a large pot, heat some oil and add the sliced onions. Fry until golden brown, then remove half for garnishing.

    Add the ginger-garlic paste to the pot and sauté for a few minutes until fragrant.

    Add the chicken pieces to the pot, along with turmeric powder, biryani masala, and salt. Cook until the chicken is browned.

    Stir in the yogurt and cook for an additional 10-15 minutes until the chicken is tender and fully cooked.

    In a separate pot, bring 4 cups of water to a boil. Add the soaked Basmati rice and cook until it's 70% done. Drain the rice.

    Layer the partially cooked rice over the chicken mixture in the pot. Cover tightly and cook on low heat for 20-25 minutes to allow the flavors to meld.

    Once done, fluff the rice gently and serve with the fried onions garnished on top.
