Indulge in the aromatic layers of Biryani, a fragrant Indian rice dish bursting with tender chicken, spices, and creamy yogurt. Perfect for a cozy weeknight dinner or a festive gathering with loved ones.

- 2 cups Basmati rice
- 500 grams chicken, cut into pieces
- 1 large onion, thinly sliced
- 2 tablespoons ginger-garlic paste
- 1 cup plain yogurt
- 1 tablespoon biryani masala
- 3 cups water
- 1 tablespoon ghee or oil
- 1 teaspoon salt
- 1 handful fresh coriander leaves
Method

Heat ghee or oil in a large pot over medium heat and fry the thinly sliced onions until golden brown. Remove half for garnishing.

In the same pot, add ginger-garlic paste and sauté for a minute until fragrant.

Add chicken pieces to the pot and cook until browned, then mix in the yogurt, biryani masala, and salt. Cover and let it marinate for 20 minutes.

After marination, add water and bring it to a boil. Then, reduce the heat and let it simmer for about 15 minutes until the chicken is cooked through.

Add the soaked Basmati rice to the pot, mix gently, and add more water if needed. Cover with a lid and cook on low heat for about 25 minutes until the rice is tender.

Once cooked, turn off the heat and let the pot sit, covered, for an additional 10 minutes to allow flavors to meld.

Fluff the rice gently with a fork and garnish with fried onions and fresh coriander leaves before serving.
