Warm up with this hearty Irish Beef and Guinness Stew, where tender beef chuck simmers with rich stout, vibrant carrots, and aromatic thyme. Ideal for cozy weeknight dinners or gatherings with friends.

Ingredients

  • 907.2 g beef chuck
  • 1 cup Guinness stout
  • 4 medium carrots
  • 1 large onion
  • 2 cups beef broth
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 tbsp fresh thyme

Method

  1. 1

Heat olive oil in a large pot over medium heat.

  2. 2

Add the beef chuck and brown on all sides, about 5-7 minutes.

  3. 3

Stir in the chopped onion and minced garlic, cooking until the onion is translucent, about 3 minutes.

Add the sliced carrots, Guinness stout, beef broth, and thyme. Stir everything to combine.

  5. 5

Bring to a boil, then reduce heat to low and cover the pot. Let it simmer for at least 2 hours, until the beef is tender.

  6. 6

Taste and season with salt and pepper as needed before serving.
