Indulge in a creamy, velvety baked cheesecake that melts in your mouth, featuring a buttery biscuit crust and a hint of vanilla. Perfect for a special occasion or a sweet treat after dinner.
IngredientsWhat you need
- 8 dig bix biscuit (for crust)
- 50 g butter, melted
- 600 g cream cheese
- 2 Tbsp plain flour
- 175 g caster sugar
- vanilla extract
- 2 eggs
- 1 egg yolk
- 142 ml sour cream
Method

Crush the biscuits and mix with melted butter. Press into a 20 cm tin and bake at 180°C/160°C Fan for 5 minutes. Cool.

Beat the cream cheese, plain flour, caster sugar, and vanilla extract until light and fluffy.

Add the eggs and egg yolk to the mixture and beat until combined.

Fold in the sour cream.

Pour the mixture into the cooled crust and bake for 40 minutes. Check if it's ready when set but slightly wobbly in the center.

Leave to cool in the tin.
Notes
Can also Nutty crust biscuits for the base.
