These homemade bagels are a warm embrace of chewy goodness, topped with sesame and poppy seeds for a delightful crunch. Perfect for a cozy weekend breakfast or a special brunch gathering with friends.

- 1 tablespoon granulated sugar
- 1 packet active dry yeast
- 1 tablespoon salt
- 1 cup warm water
- 1 tablespoon baking soda
- 1 tablespoon sesame seeds
- 1 tablespoon poppy seeds

In a large bowl, mix warm water, sugar, and yeast. Let it sit for about 5-10 minutes until foamy.

Add bread flour and salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the kneaded dough in a greased bowl, cover it with a towel, and let it rise for about 1 hour or until doubled in size.

Preheat your oven to 425°F (220°C). Bring a large pot of water to a boil and add baking soda.

Divide the dough into 12 equal pieces. Shape each piece into a ball and then poke a hole in the center to form a bagel shape.
