These homemade bagels are a warm embrace of chewy goodness, perfect for breakfast or brunch. Topped with sesame or poppy seeds, they bring a delightful crunch to your morning routine.

- 1 tablespoon instant yeast
- 1 tablespoon sugar
- 1 tablespoon salt
- 1 cup warm water
- 1 tablespoon baking soda

In a large mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.

Add in the flour and salt to the yeast mixture. Mix until a dough forms.

Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Preheat the oven to 425°F (220°C) and bring a large pot of water to a boil. Add the baking soda to the boiling water.

Divide the dough into 12 equal pieces and shape each piece into a bagel. Boil each bagel for about 30 seconds on each side, then place them on a baking sheet.
