Savor the rich, smoky flavors of this Argentine Asado, featuring tender beef short ribs, vibrant bell peppers, and hearty potatoes. Ideal for a weekend gathering or a festive family feast.
IngredientsWhat you need
- 2 kg beef short ribs
- 1 tablespoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 4 cloves garlic
- 1 bunch fresh oregano
- 3 pieces bell peppers
- 1 kg potatoes
Method
- 1
Begin by preparing the beef short ribs. Rub them with salt, black pepper, minced garlic, and olive oil. Let it marinate for at least 30 minutes.
- 2
Preheat the grill to medium-high heat. Once hot, place the marinated short ribs on the grill.
- 3
Grill the beef for about 5-7 minutes on each side, or until nicely browned and cooked to your desired doneness.
- 4
While the beef is grilling, cut bell peppers in half and remove seeds. Brush them with olive oil, then grill alongside the beef until charred and tender.
- 5
In a separate pot, boil the potatoes until fork-tender. Drain and serve with a drizzle of olive oil and a sprinkle of salt.
- 6
Once the beef is done, let it rest for a few minutes. Serve it with grilled bell peppers and boiled potatoes on the side.
- 7
Garnish with fresh oregano before serving for added flavor.
