Indulge in the creamy sweetness of Arroz Doce, a traditional Portuguese rice pudding infused with cinnamon and lemon zest. This comforting dessert is perfect for family gatherings or a cozy weeknight treat.

Ingredients

  • 1 cup short-grain rice
  • 4 cups milk
  • 1 cup sugar
  • 1 stick cinnamon
  • 1 lemon zest
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method

    In a large pot, combine the short-grain rice and 2 cups of water. Bring to a boil, then reduce the heat and simmer until the rice is tender, about 15 minutes.

    Once the rice is cooked, add the milk, sugar, cinnamon stick, lemon zest, and salt. Stir well to combine.

    Increase the heat to medium and cook, stirring frequently to prevent sticking, until the mixture thickens, about 20-25 minutes.
